Humans of San Luis: Mavis Trejos

Meet UGA Costa Rica’s triple threat, Mavis Trejos.

Chef, mother, and businesswoman, Mavis can do it all.


A member of the UGA Costa Rica staff for over 6 years now, Mavis is not only a talented chef in our kitchen, but a mother of three, and the owner of a small-scale poultry farm operation.

“Our poultry farm is relatively new. My husband and I have been in business for a little less than a year now. We have about 200 chickens and chicks now and want to expand in the near future.”

“I’ve learned out a lot more about how to slaughter, clean, and prepare chickens for purchase, but what I did not expect to see was how this process would bring my family closer.”

Mavis and her husband Jose receive help from their their three children. They have a 23-year-old daughter named Emily, and two sons, Andres and Alonso, ages 16 and 19. In addition to raising chickens, the family also harvests beans, papaya, oranges, and more for consumption within the home.

In regards to her position as one of UGACR’s beloved chefs, we asked Mavis her favorite dish to prepare for everyone. Her response? A delicious plate of, “arroz con pollo”, or rice with chicken.
